Locust bean gum, which is also known as carob gum, carob bean gum, carobin E410, is a thickening as well as a gelling agent. As a hydrocolloid agent, is mainly used for thickening, fat replications, stabilizations, gelling, coating, textures, and sizing agents in various industries. The locust bean gum belongs to the group of galactomannans, which is extracted from the seeds of carob tree and is mostly found in Mediterranean region. Bean gum is produced by crushing the seeds into fine powder. Separating grinding process removes the endosperm present in the seeds. Locust Bean Gum powder is available in two colors: White or Light Yellow.

Bean gum consists of galactose and mannose. Since the taste and sweet flavor of bean gum are similar to that of chocolate, it can be used as a substitute for chocolate. In addition, as the powder is of low cost the food industries use this as a replica of chocolate. It improves the gel strength and acts as a thickening agent.
